Chef Anatoly Komm is not only praised by The World’s 50 Best Restaurants but also wins over such admirers as El Bulli’s Ferran Adrìa.

 

Situated off the affluent Tverskoy Boulevard and boasting a panoramic view of Moscow, Varvary (meaning ‘Barbarians’) is fast becoming one of the world’s renowned gastronomic stopovers. In the kitchen, Chef Komm is the maestro, mediating Spanish molecular artistry with solid French techniques. Yet, his creations resonate with a distinctive Russian root.


Varvary's 11 course 'Gastronomic Show' costing 8,500 roubles (US$285) is full of promises. Borsch – a traditional Russian beetroot soup – becomes a dexterous spectacle. Foie gras is pan fried for a caramelised effect and served with a ball of frozen sour cream, which dissolves instantly at the pouring of crimson beetroot consommé. The humble Pelmeni dumpling makes friends with Russia’s gastronomic tour de force, Kamchatka crab, and is finished at the table with a drizzle of sour cream snow. ‘All About Honey’ features a thoughtful deconstruction of the Russian honey cake. The contrast between multi-textured honey – sponge cake, cream-filled honey cylinder, honeycomb – and dehydrated strawberry rocks is set to enthrall.
